Muffins Part 2

My muffin batch # 2 was Blueberry muffins, yum!

Blueberry crumb  muffins
(Recipe from

2 1/8   cup all purpose flour
3/4      cup sugar
1/2      cup butter, softened
1/2      Tbsp baking powder
1/2      tsp salt
1/4      tsp baking soda
3/4      tsp cinnamon ( or to taste)
3/4      cup buttermilk or sour milk
1         large egg
1/2      Tbsp vanilla
1         cup Blueberries, fresh or frozen


-Set oven to 375 degrees F.
-Generously grease 12  muffin tins 
-In a large mixing bowl using an electric mixer blend the flour with sugar, butter and salt until mixture resembles a fine meal (reserve 1/2 cup of the mixture and transfer to a small bowl; set aside to sprinkle on top of muffins)
-In a small bowl mix together baking powder, baking soda, cinnamon to the remaining flour mixture; mix until combined.

-In a bowl whisk together buttermilk with eggs and vanilla to blend; add to the creamed mixture; gently mix just until combined (do not over mix!).
-Carefully fold in the blueberries 
-Divide the mixture between the muffin tins
-Sprinkle the reserved streusel over tops of muffins.
-Bake for about 20 minutes, or until muffins test done (if using frozen berries baking time will increase slightly).

Do You Know The Muffin Woman?

When I woke up this morning I was feeling a little off. So I decided to engage in my favorite kind of therapy. When I feel stressed or just plain not right I need to cook and/ or bake. So today it's  Banana Nut muffins.

   Banana Nut muffins

     Here are the ingredients:

1 1/2 cups all purpose flour
1       tsp baking powder
1       tsp baking soda
1/2    tsp salt
3       large, ripe bananas, mashed
3/4    cup sugar
1       large egg, lightly beaten
1/3    cup butter, melted
Crumb Topping:
1/3    cup packed brown sugar
1       Tbsp flour
1/8    tsp cinnamon
1       Tbsp cold butter
1/4    cup chopped nuts ( optional)


  •  In large bowl, mix the 1st 4 ingredients.

  •  Mix bananas, sugar, egg and butter.

  • Stir into dry mixture just until moistened.

  • Fill muffin cups 3/4 full.

  • Combine first 3 topping ingredients.

  • Cut in butter until crumbly.

  • Sprinkle over muffins.

  •  Bake at 375° for about 20 minutes, until muffins test done.
