A Different Kind Of Roast Beef Sandwich

Tonight was supposed to be Cheesy Chicken Quesadillas but there was some Roast beef and Ham in my fridge that needed to be used up, so it became "new recipe" day. It turned out really yummy, so here is the recipe.

 Herbed Dinner Rolls or your favorite bread dough
1/2 onion or more according to your taste, thinly sliced
2 pound deli roast beef, cut into thin strips
2 Tbsp Italian seasoning
8 oz. of your favorite cheese, I used pepper jack , sliced
2Tbsp Butter
Divide roll dough into 12 portions then set aside.
Saute' onion in 1 Tbsp butter until translucent, then remove from pan
Combine Roast beef, 1 Tbsp butter and Italian seasoning in pan and heat through.
Add onion back in with meat

Flatten 1 portion of dough at a time either with your hand or a rolling pin
put about 1/4- 1/3 cup of meat mixture on center of dough.
Add some cheese on top and fold dough and pinch closed.
Repeat until all dough and meat is used up.
Bake at 375 for about 15 minutes or until lightly browned on top.

Strawberry Shortcakes

Several years ago I came across this recipe in a Taste of Home magazine and it has long since become my families favorite way to eat Strawberry Shortcakes. This week our local Market had  Strawberries on sale so I saw a golden opportunity I just could not pass up.

Chocolate Chip Strawberry Shortcakes

Fruit Topping

    3 cups fresh strawberries, sliced
    1/4 cup sugar


    2 cups all-purpose flour
    2 tablespoons sugar
    3 teaspoons baking powder
    1/2 teaspoon salt
    1 cup heavy whipping cream or half and half ( just regular milk works as well)
    1/2 cup butter, melted
    1/2 cup miniature chocolate chip


    1 tablespoon sugar
    1 tablespoon butter, melted
    Whipped Cream or Cool Whip

    - In a small bowl, combine the strawberries and 1/4 c sugar; cover and refrigerate until serving (this will create its own nice juices for serving).
    - In a large bowl, combine the flour, 2 tbsp sugar, baking powder and salt.
    - In a small bowl, combine the whipping cream and 1/2 c butter.
    - Stir the cream mixture into the flour mixture, just until a thick batter forms; then gently stir in the chocolate chips just till mixed.
    - Drop by 1/3 cupfuls onto a greased baking sheet ( I just use an ice cream scoop).
    - Brush tops with the 1 tbsp melted butter and sprinkle evenly with the extra 1 tbsp sugar.
    - Bake at 375F for 18-20 minutes or just until golden brown.
    - Remove to wire rack to cool completely.
    - Cut biscuits in half horizontally and spoon strawberries onto bottom half then top with whipped cream (if using) and replace shortcake tops.

Birthright Lentil Stew and Herbed Dinner Rolls

Birthright” Lentil Stew


1-lb. lentils                                                        
2 large carrots chopped                                
1 chopped onion                                               
4-5 celery stalks chopped small                
1 large potato chopped                                 
2 garlic clove chopped                                
2 Tbsp Parmesan, grated
2 tbsp olive oil
1 tbsp salt
1/2 tsp pepper
Dash of oregano
Dash of parsley
1 can tomato sauce
2- 49 oz cans of chicken broth

Soak 1-lb. lentils in very warm water for one hour.  Rinse twice and strain.  In a pot add all the above ingredients. Bring to boil, then simmer for at least 2 hours.  Spinach, noodles or thin spaghetti may be cooked separately then added when stew is finished.  Add water if needed.

Herbed Dinner Rolls


1 cup warm water
1 egg
2 tablespoons butter or 2 tablespoons margarine
1/4 cup sugar
1 teaspoon salt
1 -1 1/2 teaspoon herbs, of your choice (I like to use Italian seasoning )
3 1/4 cups flour (I use All Purpose, but you could use Bread Flour )
2 1/2 teaspoons yeast

Place ingredients in your Bread machine in order directed by your manual.
2 Run dough cycle.
3 After 2-3 minutes check dough, if it seems wet add a tablespoon or two of flour. If it seems very dry add a tablespoon or two of water.
4 When cycle is complete place dough on lightly floured surface.
5 Divide dough into 12 equal pieces and shape into rolls.
6 Place on a greased baking sheet ( can use greased 9x13 pan, Rolls can be touching lightly).
7 Bake in a 375 degree oven for 12 to 15 minutes or until golden brown.
8 you can brush some melted butter on the rolls before or after baking and sprinkle with some coarse salt, but the rolls will turn out just great even without the extra butter.


We have been eating out way to much lately and so in an effort to curb our wicked fast food ways I will try a weekly menu plan so we can avoid the daily $ 60.000 dialog between my DH and myself going something like this
Honey:  what's for Dinner?
Me:       I don't know, what do you feel like having?
Honey:  I don't know either, want me to pick up pizza on my way home from work?
Me:      Sounds great. You're my hero :)

So for Dinner this week we're having
Monday:       DD#2 cooks  Birthright Lentil Stew, yum yum
Tuesday:       Grilled Cheese sandwiches and Tomato Soup
Wednesday:  Cheesy Chicken Quesadillas with Rice and Salad
Thursday:      DD#1 cooks ???????????????????????
Friday:          Leftovers
Saturday:      Homemade Pizza, Bread sticks, Salad
Sunday:        Crock pot Lasagna, Salad

Graham Muffins

I had some Graham crackers on the verge of going stale so I decided to try these Muffins

  • 1 1/3 cups finely crushed graham crackers

  • 1 1/4 cups all purpose flour

    1/2 cup sugar
      1 teaspoon baking powder

  • 3/4 teaspoon baking soda
    1 egg,  beaten

  • 1 cup milk

  • 1/3 cup cooking oil

  • 1/2 cup  chopped Pecans

  • Grease 16 muffin cups or line with paper bake cups; set aside.

  • In a medium mixing bowl combine graham crackers, flour, sugar, baking powder, and baking soda. Make a well in the center of the dry ingredients.

  •  In a bowl combine egg, milk, and oil. Add all at once to dry ingredients. Stir just until moistened. Stir in chopped nuts.

  •  Fill muffin cups 2/3 full. Place a pecan piece atop each. Bake in a 375 degree F oven for 15 to 18 minutes or until golden. Remove from cups. Makes 12.

  • I made the following substitutions:
    Instead of 1 cup milk I used 1/3 cup dry milk powder and 1 cup water
    I also used more chopped Pecans, between 3/4 and 1 cup.
    They  are yummy!

    Sprouts Shopping Trip

    We were running low on fruits and vegies so I decided to stop at Sprouts and stock up. Here is the result of that quick shopping trip.

    Homemade Granola

    I love good Granola, but I really hate spending a fortune on it. So here is a recipe for some homemade granola I love to make. I like to change up my ingredients a little, but this is the version I made today.

    Homemade Granola

    3 cups old fashioned oats
    ¼ cup ground flax seeds
    ½ cup whole flax seeds
    ½ cup sliced almonds 

    Combine on a cookie sheet. In the meantime in a small saucepan combine

    ¼ cup honey
    ¼ cup canola oil
    ¼ cup brown sugar
    ¼ cup chunky peanut butter

    Melt over medium heat until creamy. pour over oat mixture and bake in a 250* oven  for 45-60 minutes
    ( stirring every 10 minutes)
    Let cool before adding ½ cup of craisins and ½ cup of golden raisins.
    We love to eat this with some yummy yoghurt  or with some almond milk for breakfast. yum
